Day 8 : Coconut Macaroons
10:47 PMThis is another of my favorite kinds of cookies. These cookies are positively amazing. Crispy on the outside and chewy in the center. The chocolate dipped bottoms don't hurt either.
Coconut Macaroons
- 2 2/3 c flaked coconut
- 2/3 c sugar
- 1/3 c flour
- 1/4 tsp salt
- 3 egg whites
- 1/2 tsp vanilla extract
- 4 oz semi-sweet chocolate, for dipping (optional)
- 1/2 tsp butter (optional)
Preheat oven to 325. Line a cookie sheet with parchment paper and set it aside.
In a medium mixing bowl, combine coconut, sugar, flour and salt. Stir in the egg whites and vanilla.
Drop mixture onto cookie sheet in rounded spoonfuls, about 2 inches apart. Bake for 20-25 minutes, until edges are light brown. Transfer cookies to a wire rack and let cool.
In a bowl set over boiling water, melt chocolate and butter together. Dip bottoms of cookies in melted chocolate or drizzle melted chocolate over tops of cookies.
